Place: Cimarella.
Vineyards: Montepulciano 70%, Petit Verdot 30%.
Alcohol: 13,5% vol.

Altitude: 182m above sea level.
Terrain: hilly, medium soils tending clayey.
Density per hectare: 4000.
Rearing system: guyot.
Average yield per hectare: 70 quintals.
Soil management: natural turfing and machining.
Conduction method: conventional – integrated defense.
Harvest time: October 10, 2013, after careful monitoring of the evolution of sugars,total acidity and pH.
Method of harvest: Bins.
Vinification: manual harvesting and manual selection in small containers, maceration on the skins for 10 days and daily punching down alternating délestage. Fermentation in steel tanks of 75 hl.
Maturation: 12 months in barriques (100 and 225 liters) and barrels of medium toast.
Refinement: at least 6 months of aging in bottle.
Organoleptic description: intense ruby ​​red with violet hues evident, typical of the variety. Egregious consistency. On the nose intense and very persistent with varietal aromas of ripe cherry, red fruit and violet accompanied by a pleasant hint of vanilla. In the mouth it shows the whole structure characterized by the tannins evolved. This wine is certainly long-lived, knows how to appreciate over the years.
Food pairings: fine and processed meat. Also ideal of mature cheese.
Serving temperature: 18° C.
